3 pounds chicken wings, separated into wings and drumettes (reserve tips for stock)2 tablespoons chopped garlic1 large yellow onion, rough chopped1 cup Ocean Spray® Cranberry Juice Cocktail1 cup Ocean Spray® Craisins® Original Dried Cranberries3 tablespoons Wanjashan organic soy sauce1/2 cup Frank's hot saucejuice of one lemon1 stick unsalted butter, cubedtoasted white sesame seedsscallion greens, thinly slicedGreek yogurt tzatziki (recipe below)cucumber batonscanola oilkosher salt and freshly ground black pepper
Preheat oven to 350 degrees. Season chicken wings with salt and pepper. Bake chicken wings on rimmed cookie sheets until golden brown and delicious, about 15-20 minutes. (They should be 160 degrees internal temperature.) Remove wings from oven and let cool before packaging up to bring to tailgating site. Meanwhile, heat a saute pan over medium-high heat and coat with oil. Add garlic and onion and cook until caramelized. Deglaze with cranberry juice and add craisins, soy sauce, hot sauce and lemon juice. Cook until fully combined and slightly reduced, then transfer to a blender. Remember to vent the blender top and, while blending, add 1 stick of butter. Season and check for flavor. Allow sauce to cool and package up for tailgating. Once at tailgating site, quickly grill chicken wings to heat through. In stainless steel bowl, toss chicken wings and cranberry-hot sauce. Garnish wings with sesame seeds and sliced scallions.
