Cranberry Bruschetta

  • Cranberry Bruschetta

Ingredients:

1 14-ounce can Ocean Spray® Whole Berry Cranberry Sauce
1/4 cup sugar
1/4 cup red wine vinegar
1/2 red onion, thinly sliced into rings
2 garlic cloves, minced
2 tablespoons minced fresh basil
1 teaspoon oregano
1 8-ounce loaf French bread
Oil

Directions:

Combine all ingredients, except bread and oil, in a medium saucepan. Cook on medium heat, stirring occasionally, until onion is limp and sauce has thickened, about 30 minutes. Cool to room temperature.

Cut bread diagonally into 3/4-inch slices; brush both sides with oil. Broil each side for 1 to 2 minutes or until golden brown. Top each slice with cranberry mixture. Store bruschetta refrigerated for up to 1 week.

Hospitality Students at Niagara University College served this wonderful appetizer at there fall dinner. I absolutely fell in love with it and plan on serving it on Thanksgiving Day.

This really is delicious, and easy, however I always make my whole cranberry sauce, using an artificial sweetner.
