Citrus Burst Muffins

  • Citrus Burst Muffins

Ingredients:

2 cups flour
1/2 cup brown sugar
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon salt, optional
3/4 cup milk
1/2 cup orange juice
1/2 cup oil
1 egg
1 cup Ocean Spray® Craisins® Orange Flavor Dried Cranberries
1/2 teaspoon orange zest
1/3 cup chopped pecans
Sugar

Directions:

Preheat oven to 400ºF. Grease or line a 12-cup muffin tin.

Combine flour, both sugars, baking powder and salt in a medium mixing bowl.

Combine milk, orange juice, oil and egg in a separate mixing bowl. Add liquid ingredients to dry, stirring just until dry ingredients are moist. Stir in orange flavor dried cranberries and orange zest.

Fill muffin cups 3/4 of the way full of batter. Sprinkle tops of muffins with pecans and sugar.

Bake for 18 to 20 minutes or until golden brown. Cool 5 minutes in muffin tin. Remove muffins from tin; cool on a wire rack.

Makes one dozen muffins.

We loved them! Not too sweet, but just right for breakfast. I used regular craisins & fresh OJ. Bitterness could be from pith in the zest. I will mix pecans into the batter next time. They almost burned, but the muffins were big & beautiful.

I don't know what kid would eat these. They were bitter, not very orange-y, and a waste of good craisins.

This is my go-to recipe for muffins when my husband wants to bring something in for breakfast for his employees. I leave out the nuts and add mini white choc. chips. I also use regular craisins as I think flavored Craisins are silly. DELICIOUS! Must use FRESH orange juice and zest or the recipe will seem bland. Never had an issue with the recipe. Turns out picture perfect every time *IF* you follow the recipe carefully.

I baked this as a coffee cake. Pre-greased the glass baking dish and increased the baking time to 40 minutes. Everyone loved it!
