Cranberry Almond Bread

  • Cranberry Almond Bread

Ingredients:

2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg
1/2 cup milk
1/2 cup butter, melted
2 teaspoons almond extract
1 5-ounce package Ocean Spray® Craisins® Original Dried Cranberries
1 tablespoon sugar
1/4 cup sliced almonds

Directions:

Preheat oven to 375ºF. Grease an 8 1/2 x 4 1/2 x 2 inch loaf pan.

Combine flour, sugar, baking powder and salt in a medium mixing bowl. Set aside.

Combine egg, milk, butter, almond extract and dried cranberries in a medium mixing bowl. Add to dry ingredients; mixing just until the dry ingredients are moist. Spread batter in loaf pan. Sprinkle with sugar and almonds.

Bake for 1 hour or until a toothpick inserted into center of loaf comes out clean.

Makes 1 loaf.

This bread was so dry....it was hard as a rock. There definitely must be something missing 'cause I followed the recipe to a T.

If you liked this recipe, did you do something different? It tastes good but is extremely dry and crumbled when cutting. Any suggestions as to how to make it moist?

I make a lot of these breads around holidays for gifts! The trick I use is I alway "freeze" the bread first! Even if I intend to take it to a affair that night,because that makes it easier to cut through the nuts ,etc! It thaws really quick.By the time You arrive for the Goodies to be put out!

i was out of a couple items, but with what i did have to substitute (i used applesauce instead of butter and brown sugar instead of white and added honey roasted peanuts and pecans since i only had about half the cranberries) it came out delicious and smells like strawberry poptarts out of the toaster! we frosted it with a sour cream and marshmallow cream whipped together after letting it cool 20 minutes in the pan on a wire cooling rack
