Cranberry Banana Bread

  • Cranberry Banana Bread

Ingredients:

1 cup sugar
1/2 cup butter or margarine, softened
1 cup mashed banana
1/4 cup milk
2 eggs
2 cups flour
2 teaspoons baking powder
1/2 cup walnuts, chopped
1 5-ounce package Ocean Spray® Craisins® Original Dried Cranberries

Directions:

Preheat oven to 350ºF. Grease an 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pan.

Mix sugar and butter together in a medium mixing bowl until completely blended. Add banana, milk and eggs, mixing well. Add dry ingredients, mixing just until moist. Stir in nuts and dried cranberries. Spread batter evenly in a loaf pan.

Bake for 1 hour or until a toothpick inserted into the center of the bread comes out clean. Remove from pan and cool.

Makes 1 loaf.

It was very moist and tasty, I used a mix of chopped nuts. Is the best cranberry banana bread I've had

This is a favorite in our family. When I take food to share to my kids (who live in apartments) they always want some of this bread. In fact my daughter told me that anytime I wanted to make this, she would take a loaf. They all three love it! Also...my older brother has been a craisin fan for many years and this is one he asks me to make for him again and again too. Thanks for a great recipe.

This bread was delicious! Everyone enjoyed it. It was easy to make and I would definitely bake it again! Bananas, cranberries, and walnuts make a good combination.

Too many Americans are obese and prediabetic. Recipes with less sugar and fat are needed.
