Makes 8 scones


2 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter or margarine
1/2 cup heavy cream
1 egg
1 cup Ocean Spray® Craisins® Original Dried Cranberries
2 teaspoons orange zest


Preheat oven to 425ºF. Grease a cookie sheet.

Combine dry ingredients in a large mixing bowl. Work butter or margarine into dry ingredients until butter is the size of small peas using a pastry blender or fork. Add remaining ingredients, mixing just until dry ingredients are moist.

Turn dough onto a lightly floured surface and gather into a ball. Pat into a circle 3/4-inch thick; cut into 8 wedges. Place on cookie sheet. Sprinkle with sugar.

Bake 12 minutes or until golden brown. Makes 8 scones.

I can't tell you how many times I have made this recipe. It is absolutely delicious! I do put my own twist on it though. I increase the butter to a 1/2 cup of butter, add almond extract and add more Craisins. I then form it in a circle and refrigerate usually overnight, and as soon as I take it out of the refrigerator, it's baked at 350 degrees for about 20-25 minutes or so until done. As soon as it comes out of the oven, I drizzle a glaze all over the top which is a combination whisked together of almond extract, water and powdered sugar. This soaks into every place on the scone. The texture of the scone is more like a biscuit and not dry and crumbly as a usual scone would be. I haven't meant anyone yet whose eaten it and not fell in love.

This worked very well for me. I did not have orange zest so I used the Craisin that are orange flavored and it was a great substitution. I put in a few more Craisin.

These scones are very good. I did a little tweaking because the dough was just a little bland and I like a sweeter scone than what the original scone provided. But, all in all....these are very good!
