Makes 1 loaf


2 cups peeled, chopped apple
3/4 cup sugar
2 tablespoons oil
1 egg
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 cup Ocean Spray® Fresh or Frozen Cranberries
1/2 cup chopped walnuts


Preheat oven to 350ºF. Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.

Combine apples, sugar and oil in a medium mixing bowl. Add egg, mixing well. Combine dry ingredients in a separate mixing bowl. Add to apple mixture, mixing just until the dry ingredients are moist. Stir in cranberries and walnuts.

Spread batter evenly in loaf pan. Bake for 1 hour or until a toothpick inserted into the center of the bread comes out clean. Makes 1 loaf.

With changes, this was a good starter recipe

after reading a few reviews and based on other recipes, i revised this recipe before baking and it came out moist and GREAT. 1 cup pureed apple, 0.25c oil, 1tsp vanilla, 1.25tsp cinnamon, 2c flr, 0.5c pre-soaked craisins, 0.5c craisins, dash of nutmeg, 0.25c honey, 1/2 packed brown sugar, 1Tbsp white sugar. makes 4 mini-loaves. didn't have fresh cranberries, lol

Good, but needs a few more ingredients

I made muffins with this recipe exactly as given, but it wash't as tasty as expected. The next time I added 1/4 tsp salt and 1/2 tsp ground nutmeg to the dry ingredients 1 1/2 tsp vanilla to the apple mixture. I also used brown sugar for half the sugar. EXCELLENT !

This Has Been Part of My Holidays for 20 Years

I found this recipe probably 20 years ago and gave it a whirl. It was outstanding, and I've made it one of the recipes I always aim to include on my holiday menu. It's especially good in small loaf pans or muffin tins.

A Thanksgiving Hit

I made this as a take-home for people to enjoy as Black Friday breakfast, since I knew there were too many other desserts coming for Thanksgiving dinner. But despite all the other sweets on the table, people didn't want to wait to try this and said they enjoyed it a lot. I made it as is with Granny Smith apples and Canola oil, except I added 1/2 t of vanilla (mostly because I enjoy the smell as it bakes). I plan to make this again. I might consider adding a little more oil next time, since the batter seemed pretty dry (although people assured me the final product wasn't).

Made this to go with Thanksgiving dinner

I am attending Thanksgiving dinner at a friends house and was ask to bring cranberry bread. I found this recipe and made it. I decided to make muffins instead so it would be easier to serve. Just grab and go! They are delicious. Bake at 350 for about 35 minutes. I ate two of the 36 (3 batches) I made and they will be a big hit. I also put a cranberry on top before baking so they are recognizable from the banana nut ones. It looks like a cherry on top!



At the end of the day, you deserve to unwind. Sit back with the taste that takes you away!
