I made this for my ladies' Bible class and everyone enjoyed them.
I tried this recipe for the first time last night and I will definitely be using it again. The muffins turned out so moist and delicious, not too sweet and not too bland. Honestly one of the best recipes I've tried it a long time.
Just pulled these out of the oven. I made changes, because I always make changes! Reduced sugar to 1 cup, reduced baking powder to 1 tsp, added 1/4 tsp baking soda, used yogurt instead of milk, and added 1 tsp vanilla. Also used 1/3 cup whole wheat flour plus 1 and 2/3 cup all purpose flour. Baked at 375 for 10 min, then reduced to 350 for remainder of time, until toothpick came out clean ... about 25 minutes total. Also ended up with more than 12 muffins. They taste very good.
Delicious!! Made them exactly as the recipe except the nuts due to nut allergy...didn't need anything else...light and more like a cranberry cupcake. Will definitely make again and again!!
Would use orange zest next time. Overall very good moist recipe
