Makes 1 loaf


2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup butter or margarine, softened
1/2 cup sugar
1 egg
1 14-ounce can Ocean Spray® Whole Berry Cranberry Sauce
1 cup chopped walnuts


Preheat oven to 350ºF. Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.

Combine flour, baking powder, cinnamon and nutmeg in a small mixing bowl; set aside.

Using an electric mixer, beat butter or margarine with sugar in a medium mixing bowl until light and fluffy. Add egg; mix well. Break up cranberry sauce with a fork and add to the butter mixture. Add nuts. Add dry ingredients to the cranberry mixture, mixing just until the dry ingredients are moist.

Spread batter evenly into prepared loaf pan. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. If bread begins to brown too quickly, loosely cover with foil and continue to bake until bread tests done.

Makes 1 loaf.

Good starting point but should modify

As others suggested this recipe should be altered to be better. I added a bit of lemon extract and it tastes great!

This is a good recipe. Good ratio og liquid ingredients to dry ingredients. I like the whole cranberries. This is a tasty recipe. I added 2 tablespoons of fresh squeezed orange juice and 2 teaspoons of rum extract to the muffin batter.i omitted the cinnamon from the muffin batter. I made a glaze using 1/4 cup of fresh orange juice, 1 teaspoon of rum extract and powdered sugar.

This bread is so bland and when I slice it it crumbles. So disappointing - I was sure Ocean Spray would do much better.

Delicious Recipe for the Holidays!

I made these into 12 muffins, adding 1/4 tsp salt, 3T more sugar, and 1/2 tsp vanilla extract. If you're not a fan of nutmeg, either reduce the amount or omit it altogether. Adding a little orange zest would be delicious too. The recipe seems to be forgiving, so you could increase the nutrition content by swapping half of the all purpose flour for whole wheat, as the batter is very moist. Remember the flavor will vary, based on the brand of cranberry sauce you use. I tested the batter for sweetness before baking. I would definitely make these again.

Confirm recipes with seniors when you get them

Had a 15 year old recipe from my great aunt who always made this every year for Thanksgiving. She has severe dementia now, doesn't cook, so I couldn't confirm her ingredients on her hand written recipe.. I used a combination of her recipe ( add salt and 3/4 cup sugar, butter) with your recipe of baking powder and cinnamon. It's in the oven now. Hopefully it turns out ok.
