Prep Time

Ingredients

1 large freezer-safe Bundt® pan or ring mold
1 12-oz. bag of Ocean Spray® Fresh Cranberries
Fresh mint leaves, if desired
Water *

Directions

Rinse cranberries in cold water. Drain.

Fill pan 1/2 inch to 1 inch deep with water. Place on even surface in freezer and freeze until solid. Remove pan from freezer. Add an additional 1/4 inch water over the ice surface. Arrange cranberries and mint leaves in desired pattern then return pan to freezer. Once set, add an additional 1/2 inch to 1 inch of water and freeze until solid.

Note: Cranberries float, so if you add all the water at once, the cranberries will float to the surface. When you unmold the frozen ring, the decoration will be on the bottom of the ring.

To unmold, run briefly under warm water to loosen.

* Note: Ice ring can also be made with Ocean Spray® White Cranberry Juice Drink instead of water.

White Cranberry Juice Flop

I used the white cranberry juice as others suggested. The clear white juice froze a solid white that you could not see the cranberries through. It also does not freeze as hard as water. It started to melt almost immediately. Maybe it was the store brand. But that is all down the drain and I have started over with water. I gave it 5 stars if you stay with the water.

Everyone was so impressed!

Made this for a party last night and it was a big hit! It didn't come out perfectly; I don't think the drawer in my bottom freezer is level! Also I'm not sure of the secret to getting the ice to be completely clear-- mine was whitish with gas bubbles-- maybe using distilled water? Using white cranberry juice is not the best idea-- the sugar lowers the freezing point and will make the ice ring melt more quickly. The punch I made was simple: frozen lemonade concentrate, white cranberry juice, and plain seltzer water. Very forgiving as you can add more of each as you need. Chill everything first. Next time I might strain the lemonade concentrate-- I was going for a clear light-colored punch and pulp took away (only slightly) from the appearance. I served this with ice cubes optional, extra seltzer for people who don't like their drinks too sweet, and a bottle of Prosecco on the side for people who wanted a little kick.

white cranberry juice instead of water, cranberry freeze. Than cran juice with grape or blue berry in it or food coloring in white cran juice with club or what ever else you made want to add.Colors can be changed to different events and Holidays. Fruits can be add to the punch and well as sherbet. Have fun you can make different molds . Lets all enjoy healthy cranberries goodies with our punch.

I used the white Cranberry Juice as you suggested. The combination of cranberry with a hint of mint, fill remaining bowl with Lemon-Lime Soda and even portion of White Cranberry Juice. It was a success!
