Cranberry Mousse

  • Cranberry Mousse

Ingredients:

1 cup Ocean Spray® Cranberry Juice Cocktail
1 3-ounce package raspberry-flavored gelatin
1 14-ounce can Ocean Spray® Jellied Cranberry Sauce
2 cups frozen non-dairy whipped topping, thawed

Directions:

Heat cranberry juice cocktail to boiling in a saucepan. Remove from heat and stir in raspberry gelatin until dissolved; transfer to a large mixing bowl. Using an electric mixer on high speed, beat cranberry sauce in a small bowl for 1 minute. Stir into gelatin mixture. Chill until mixture begins to thicken, but not set.

Gently mix in whipped topping, using a rubber scraper. Spoon into serving dishes or prepared pie shell. Chill until firm. Makes 8 servings.

I've been making this for 35+ years. It is a family favorite - especially for our holiday meals and get-togethers. It is much better made with real whipping cream. It is also delicious served in an oreo cookie pie crust!

I first got this recipe with I visited Ocean Spray in 1982. I have been making this ever since every time my family gets together. Love It!

This recipe is not only light and delicious, it is also very versatile. I can dress it up by serving in antique dessert goblets garnished with mint leaves or in one big bowl for a casual family dinner. I like to make double the recipe to freeze a batch for another day when we have company or for when my husband is looking for a midnight snack....I even use the whipped cream container to store it in. It is very easy to make! I love it!
