Cranberry Nut Pie

  • Cranberry Nut Pie

Ingredients:

1 1/4 cups Ocean Spray® Fresh or Frozen Cranberries
1/4 cup brown sugar
1/4 cup chopped walnuts
1 egg
1/2 cup sugar
1/2 cup flour
1/3 cup butter or margarine, melted
Vanilla ice cream

Directions:

Preheat oven to 325ºF. Grease a 9-inch pie plate.

Layer cranberries on bottom of pie plate. Sprinkle with brown sugar and nuts. Beat egg in a medium mixing bowl until thick. Gradually add sugar, beating until thoroughly blended. Stir in flour and melted butter; blend well. Pour over cranberries.

Bake 45 minutes. Cut into wedges. Serve with ice cream. Makes 6 servings.

Don't forget to use a bottom pie crust, for those cooks who follow a recipe exactly! I use instead of sugar an equivalant amount of sweetening power of stevia. If using the pure white powder it is 1/8th of a teaspoon. The entire family loves it, and has asked for it again this year for the holidays. It has moved my life long love of pumpkin pie to 2nd place!

When I was young, (12 yrs. old) Mom made this every year for Thanksgiving dessert. It was a family favorite. As an adult, I've made it many times for my family, and now my son, who is 29, loves making it too! This favorite has endured for approx. 50 years! We always stocked up on berries and froze them for out of season use.
