5-6 pound fresh ham, bone-in (i.e. leg of pork with bone in and skin on)Extra-virgin olive oilKosher salt and freshly ground black pepper1 bunch fresh thyme1 bunch fresh sageApple-Cranberry Sauce:6 pink lady apples, split in half2 cups Ocean Spray® Fresh Cranberries, (if not fresh, frozen is fine)1 cinnamon stick1 bay leaf1 tablespoon pickling spice1 tablespoon black mustard seeds2 tablespoons sugar1-inch piece of ginger1 1/2 cups apple juice1/2 cup apple cider vinegar
Preheat oven to 300 degrees F.Score fat and put ham, fat side up, in a roasting pan. Rub with extra-virgin olive oil and season with plenty of salt and pepper all over. Tear sage and pick thyme leaves and scatter over ham. Cover loosely with foil and roast for 3 hours. Remove foil and roast for final hour uncovered.In a large saucepan add all the sauce ingredients and simmer for 10-15 minutes until apples are almost falling apart and the sauce is fragrant. Remove cinnamon stick, ginger and bay leaf, then serve with baked fresh ham.Serves 8-10Recipe courtesy of Tyler Florence.
