In the interest of full disclosure, I left the red onion out of the recipe, and added a half cup of whole cranberries (Ocean Spray ones, of course). I have two bags of frozen cranberries left in my freezer from last season.
The result was a moist pork loin, with a slight bit of tang from the flavor from the whole cranberries.
Served it with Macintosh apple and cranberry stuffing. A side of french cut green beans closed out the meal.
It flew off of everyone's plate.
