I made this salad for the first time several years ago. Since then, it's been a favorite at every family function. In fact, I just finished making a batch today for a family get-together tomorrow. You can't go wrong with this dish. Even the children in our family will eat it, and they are picky eaters!
A few slight alterations...
It's very good but I didn't use sugar...I used a tsp of turbinato sugar and substituted the mayo for plain greek yogurt. It was delish!
I make a variation of this recipe, using half broccoli and half cauliflower florets for additional color. I omit the cheese as it gets soggy if we have any leftover salad. As a time saver, I cut up all the vegetables and make the dressing the day ahead and then just mix it in the morning before our Easter dinner.
I halved the recipe and blanched the broccoli first. Had shallots and apple cider vinegar on hand, substitutions worked out fine. I thought bacon was an odd ingredient, but it works. Family loved it, making again tonight.
So good I was told to make it again - immediately!
