  • Effortless Spinach Salad

Ingredients:

8 ounces fresh spinach
1/2 cup feta or goat cheese, crumbled
1/4 small red onion, thinly sliced
1/2 cup Craisins® Original Dried Cranberries
2 tablespoons toasted sliced almonds, optional

DRESSING:
1/2 cup bottled balsamic vinaigrette salad dressing
2 tablespoons orange juice
1 teaspoon orange zest, optional

Directions:

Wash and clean spinach. Tear into bite size pieces and place in a serving bowl. Add half of the feta or goat cheese and onion; toss to combine.

Combine dressing ingredients in a small mixing bowl. Pour over salad and toss to coat. Sprinkle with remaining cheese. Top with dried cranberries and almonds. Serve immediately.

So quick, easy and so goood!. It's been a family favorite for many years. Romano cheese is also good.

I have been making this same salad for a long time but I use walnuts instead of almonds & pears instead of onions & it's always a favorite with the family !

I substituted a Pomegranate dressing and a baby spinach mix and we loved it. I keep an assortment of nuts in the freezer, then toast what I need in the microwave. Delicious.

I made this salad last year for Thanksgiving and this year my nephews were talking about it and asking if I had made it again. I hadn't so I will make it for Christmas! Very easy and very Yummy!!

I made this for friends in CA and they loved it. This is the only way they will make spinach salad from now on. I did substitute pecans for the almonds since one could not eat them and it was still delicious.
