Chicken Cranberry Almond Salad


When you’re counting calories, salad is an easy choice. This one’s a tasty way to crunch the numbers: crisp greens, crunchy almonds, tender chicken, and surprisingly-sweet Craisins® Sweetened Dried Cranberries.

Ingredients:

  • 1 bag (8 oz) field greens
  • 2 packages (6 oz each) refrigerated roast chicken breast cuts
  • 2 tablespoons finely chopped red onion
  • 1 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
  • 1 cup Sunkist® Original Oven Roasted or Honey Roasted Almond Accents® flavored sliced almonds
  • 1/2 cup prepared light or regular raspberry vinaigrette

Directions:

In large bowl, toss all ingredients except vinaigrette. Pour vinaigrette over salad; toss to coat.

Yield: 4 (2-cup) servings.



Crunch Time for Kids

The key to helping kids learn good nutrition habits is to start early, start simple and start at home. Parents who maintain a healthy, positive attitude toward eating tend to pass those attributes on to their children.

Crunch! Teach kids that potato chips aren’t the only snacks with that satisfying crunch. Serve celery, carrots, apples, and other crisp fruits and vegetables with peanut butter or low-fat salad dressings for dipping. Or serve fresh fruit kebobs with yogurt.
Introduce new foods at the beginning of meals, in small, manageable portions, when children are most hungry and willing to try them. Set out an appetizer tray of fresh vegetables and cheeses, or serve a small green salad or fruit salad as the first course.
Disguise fruits and veggies in sweet treats perfect for a quick breakfast or after school snack. Make mini zucchini breads or carrot cake muffins, or try our Cranberry Blueberry Muffins for a double dose of goodness.
Be creative with veggies. Serve beef and vegetable stir fry, chicken quesadillas with fresh salsa or a green salad served in a tortilla shell.
