Refreshing Grapefruit Facial Mask
1 egg white
1 teaspoon Ocean Spray 100% White Grapefruit Juice
1 teaspoon sour cream
1 drop grapefruit essential oil
Using a wire whisk, beat egg white until very foamy and triple in volume.
Whisk in the grapefruit juice, sour cream and essential oil.
To use facial mask, apply to clean face and neck. Leave on for about
15 minutes. Rinse well with warm water and continue with regular daily
facial care.
To store remaining mask mixture, cover well and store in the refrigerator
up to 4 days. Whisk before using. Makes 1/2 cup (2 applications).

Ruby Smoothie
1 cup Ocean Spray® Ruby™ Tangerine Grapefruit Juice Drink
1 cup fresh or canned pineapple chunks (if canned, drain first)
1/2 cup vanilla frozen yogurt
Put all ingredients into a blender. Cover and blend on high speed until ingredients
are thoroughly combined. Makes 1 serving.
Ruby Citrus Sparkler
6 ounces Ocean Spray® Light Ruby™ Grapefruit Juice Drink
3 ounces orange juice
2 ounces lime-flavored sparkling water
Pour grapefruit juice drink and orange juice into a glass with ice. Top with
sparkling water. If desired, garnish with orange or lime slice. Makes 1 serving.
Rubytini
6 ounces Ocean Spray® Ruby™ Grapefruit Juice Drink
3 ounces citrus-flavored vodka
Grapefruit wedge, garnish
Combine ingredients, except garnish, in a cocktail shaker with ice. Strain
into a sugar-rimmed martini glass. Garnish with a slice of grapefruit garnish
dipped in sugar. Makes 1 serving.
Grapefruit Citrus Salsa
1 Ocean Spray® Fresh Grapefruit, peeled, sectioned and cut into 1/4-inch
cubes
1 mango, cut into 1/2-inch cubes
1/2 large red pepper, diced
1 green onion, white and green parts, sliced
2 tablespoons chopped, canned jalapeno peppers
1/3 cup apple juice
Juice of 1 lime
Directions
Combine all ingredients in a non-metal mixing bowl. Cover and chill. Serve
as condiment with fish, pork or chicken. Makes 2 cups.
Mix all vinaigrette ingredients in a small covered container. Reserve 1/4
cup for broiling
seafood; refrigerate remaining vinaigrette for several hours to blend flavors.
Preheat broiler. Line a rimmed baking sheet with foil. Rinse shrimp and scallops
in cold water; drain well. Place shrimp and scallops on prepared baking sheet.
Brush with the reserved 1/4 cup vinaigrette. Broil 3 to 4 inches from heat
until scallops are opaque and shrimp are pink and cooked through, 4 to 6 minutes,
turning once. Place cooked seafood in a medium bowl; cover and refrigerate
until cold.
To serve, divide seafood among 4 individual plates; pour vinaigrette over
seafood. Sprinkle with green onions. If desired, garnish with additional lemon
peel and fresh herbs.*Yield: 4 servings Vinaigrette yields about 3/4 cup.
Ruby-Honey Glazed Grilled Chicken
2/3 cup Ocean Spray® Ruby™ Grapefruit Juice Drink
1/4 cup butter
1/3 cup brown sugar
2 tablespoons honey
1 1/2 teaspoons red pepper flakes
4 boneless, skinless chicken breasts
Combine grapefruit juice drink, butter, brown sugar, honey and red pepper
flakes in a medium saucepan. Cook over medium heat, stirring until smooth,
4-6 minutes. Set aside to cool 10 minutes. Arrange chicken breasts in a 11x7x1-1/2-inch
baking pan. Pour 2/3 cup marinade over chicken just to cover, reserving 1/2
cup. Cover pan with plastic wrap. Refrigerate and marinate for 30 minutes.
Remove and turn chicken over, allow to marinate another 30 minutes. Divide
remaining 1/2 cup marinade in half again; 1/4 cup will be used for basting
and 1/4 cup will be used for serving.
Preheat grill. Grill chicken for approximately 4 minutes on each side; basting
once or twice per side. Cook until chicken reaches 170° F on an instant-read
thermometer. Warm remaining 1/4 cup marinade, drizzle over chicken. Makes 4
servings.
