Love this recipe
I like to make 2 loaves at a time so I double the recipe. I also zest a whole orange, chop the zested peel and add it all. The recipe on the bags actually use vegetable oil, which is what I use. I wrap the extra loaves in wax paper and freeze in plastic bags. It's a beautiful loaf with the orange and red colors. Everyone loves it.
adding an orange
We like things tart! Instead of orange juice and zest, a whole orange (with peeling)cut up and put in food processor, was put in recipe. About 1/2 C water was also added. It was divine! Great mix with cranberries!
I buy and freeze extra cranberries so I can make it all during the year. Everyone loves it lot's of request. I've been baking this recipe since I started baking over 50 years ago. I packed something's away not realizing the recipe was in one of the boxes so I came on line too copy it. Thank you for making it available.
Ocean Spray Cranberryy Bread
I found the recipe unusual but delicious. Is a heavier bread than many but beautifully sets off the cranberries and nuts making .. It is a picture to look at. I made exactly and was so good got reduce cranberries after New Years and am making it again. I found the recipe a joy. .
I make this every year around the holidays. People love it!! My son lives in NY and asked if I could send him a few loaves so I did. He asked if I could send him more. So I decided to do smaller loaves. I was worried it would come out to heavy/dense so I added 2 eggs instead of 1 to the recipe. It came out PERFECT!! It was light/airy, NOT cake like. if doing smaller loaves bake time is 30-35 minutes drpending on the oven.
