This is a good recipe but I always substitute honey for sugar, add a few dashes of allspice and 1 tbsp of vanilla extract, then I add 3/4 cup of rolled oats (oatmeal) to compensate for the extra moisture in the honey. Finally, I sprinkle a few of the oats on top for an added visual appeal. NOTE: I use fresh cranberries when they are in season (nothing compares to their refreshing tartness) and craisins when they are not. Deliciously good stuff!!!
should the recipe have called for baking soda?
All other recipies I sesrched only used baking soda vs baking powder?....
I've made this recipe many times
Everyone loves it..
I have a few tweaks I do to the recipe
You will have to figure them out for your self
Really Good Bread
My husband and I really liked the bread. I used whole cranberries. It has 8 grams of fiber per serving (12 per recipe) and that is fantastic! Makes a good breakfast bread or a super healthy snack.
Tasted just ok. I will not make again. Texture was ok. Not real moist but not dry. The whole thing was just ho-hum.
