Oatmeal Cranberry White Chocolate Chunk Cookies

  • Oatmeal Cranberry White Chocolate Chunk Cookies

Ingredients:

2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 5-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

Directions:

Preheat oven to 375ºF.

Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 2 1/2 dozen cookies.

I would make cookie again only after cutting down the cooking time and adding some liquid. This cookie was VERY dry. I made them for cookie platters. Big disappointment. Tried placing bread in bowl with them but didn't help. Still dry.

I used to make this recipe years ago, but my recipe had a mix of real cranberries and raisins, for which I started substituting Craisins and also included orange and lemon zest. Citrus zest really brings out the flavour.

I add cinnamon to the batter. If they are dry after the first batch, I add about 1/2 tsp. of milk to the batter and if they continue to be on the dry side; a 1 or 2 slices of white bread to the airtight container you store your cookies in.

Stars Needs another cup of Sugar

I think that this recipie needs a cup of sugar added to be a cookie. They are not very sweet and more like a scone.
