Black Bean Sliders with Simple Cranberry Relish

DIRECTIONS

To Make the Burger:
In a blender or food processor, add the onion, the Craisins® Dried Cranberries, all the garlic, soy sauce, vinegar, seasonings and the egg. Blend until a smooth paste forms.

In a large mixing bowl, add beans and the blended mixture. Mash the mixture with a potato masher or gloved hands until most of the beans are smashed. Fold in the breadcrumbs until combined. If the mixture is too warm or sticky, let it rest in the fridge for 15-20 minutes.

Form 12 small sliders and place them on a sheet tray lined with wax paper. Cook on a lightly oiled non-stick skillet over medium high heat or grill until the internal temperature reaches 165 degrees farenheit (approximately 2-3 minutes on each side).

Serve on toasted Hawaiian rolls with your favorite cheese and cranberry relish.

To Make the Relish:
Dice the remaining onion half. In a small saucepan, add the Craisins® Dried Cranberries, water, apple cider vinegar, onion, and sugar. Cook until boiling, then lower the heat and simmer until the Craisins® Dried Cranberries and onions are tender, and the relish is thick .

Chef’s Tip: If desired, cheeses that pair well with this are gruyere, smoked cheddar, or Swiss. Sub the black bean burgers for your favorite ground beef or poultry for a non-vegetarian or vegan option.
