- 1 cup sugar
- 1/4 cup butter or margarine, softened
- 1/2 cup egg substitute
- 1/4 cup applesauce
- 1/4 cup skim milk
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup peeled, chopped apple (about 1 large apple)
- 1/4 cup chopped walnuts, toasted
Preheat oven to 350ºF. Lightly spray a non-stick 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with non-stick vegetable spray.
Mix sugar and butter together in a medium mixing bowl until completely blended. Add egg substitute, applesauce, and milk; mixing well. Add dry ingredients, mixing just until moist. Stir in apples, dried cranberries and nuts.
Spread batter evenly in loaf pan. Bake for 55 to 60 minutes or until a toothpick inserted into the center of the bread comes out clean.
Makes 1 loaf.
