1 1/2 pounds sweet potatoes, peeled and cut into 1/2-inch cubes

1 cup Ocean Spray® Fresh or Frozen Cranberries

1 large apple, peeled and cut into 1/2-inch cubes

1/4 cup melted butter or margarine

1/2 cup raisins

1/2 cup sugar

1 1/2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 cup Ocean Spray® Cranberry Juice Cocktail

1/3 cup pecan halves, toasted

Directions

Preheat oven to 350ºF.

Combine sweet potatoes, cranberries, apple and raisins in a large mixing bowl. Combine butter, sugar and spices in a separate bowl. Add to sweet potato mixture, tossing to coat.

Place in a shallow 2-quart casserole dish. Pour cranberry juice over top of casserole. Cover and bake for 50 minutes or until potatoes are almost soft, stirring occasionally. Stir in pecans and cook, uncovered, 10 more minutes or until potatoes are tender. Let casserole sit 10 minutes before serving.

Makes 8 servings.

I started making this recipe about two years ago, everyone loves it. One of my gran daughters ask me to make extra for her to take home. <3 Love making them happy. :)

I have made this sweet potato bake every Thanksgiving and Christmas for the past 4 or 5 years for my extended family. Everyone loves it and has asked for the recipe. It's easy and delicious. I highly recommend it.

Made this for a Thanksgiving dinner at my church and EVERYONE wanted to know who made it and what the recipe was! It was the talk of the evening! I made a much larger dish of it, but converting it to larger proportions was pretty easy, its hard to go wrong with these ingredients. I also left out the raisins and used brown sugar.
