Ingredients

2 cups chicken broth

1/2 cup brown rice

1/2 cup wild rice

3 tablespoons butter or margarine

3 medium onions, sliced in thin wedges

2 teaspoons brown sugar

1 cup Ocean Spray® Craisins® Original Dried Cranberries

1/2 teaspoon finely grated orange zest

Directions

Combine chicken broth and both rices in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to low. Cover and simmer 45 minutes or until rice is tender and the liquid is absorbed.

Meanwhile, melt butter in a medium skillet over medium-high heat. Add onions and brown sugar. Cook 6 minutes or until liquid is absorbed and onions are soft and translucent. Reduce heat to low. Slowly cook onions, stirring often for 25 minutes or until they are caramel color. Stir in dried cranberries.

Cover and cook over low heat for 10 minutes or until cranberries swell. Gently fold cranberry mixture and orange zest into cooked rice. Makes 4 to 6 servings.

Wonderful side dish. I omitted the orange peel and upped the brown sugar a touch. I also chopped the onion. The entire family loved it.

Fewer onions and real butter

A bit labor intensive but VERY good. Replaced the nasty margarine suggestion with butter and used only TWO onions and not three. I think three would have been overboard. Otherwise it was a hit with my organic brown rice and wild rice right from the Boundary Waters. YUM!

Must have at Christmas / Thanksgiving

I have been making this recipe for a number of years to rave reviews. One of my go to recipes to make the holidays special!

I didn't have any brown rice so I use white rice. I would not use as many onions as they recommend and I would cut them much smaller than I did. It still was very good.
