Fresh Cranberry-Peach Salsa

INGREDIENTS

  • 1 12 ounce Ocean Spray® Cranberries
  • 1 peach, diced small
  • 1 bunch scallions, sliced thinly
  • 2 limes, zested and juiced
  • 2 jalapeno peppers, seeded and diced small
  • 1 bunch cilantro, chopped finely
  • 1/2 cup olive oil
  • salt & pepper to taste

DIRECTIONS

In the bowl of a food processor, pulse all the ingredients about 20 times (you may have to scrape down the sides) until well-combined, but not pureed. Refrigerate until ready to serve.

Best served with grilled salmon, baked brie or roasted meats!
