12 muffins

1 cup sugar

1/2 cup butter or margarine

2 eggs

2 cups flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon baking soda

1 cup Ocean Spray® Ruby Red Grapefruit Juice Drink

1 1/4 cups Ocean Spray® Craisins® Original Dried Cranberries

Orange zest (optional)


1 cup powdered sugar (may need more depending on consistency)

2 tablespoons Ocean Spray® Ruby Red Grapefruit Juice Drink


Preheat oven to 350ºF. Grease muffin tins.

Add Craisins® Dried Cranberries to a bowl and cover with Ocean Spray® Ruby Red Juice Drink. Microwave 1 minute until plump. Strain, reserving ½ cup of the Ruby Red Juice Drink for the recipe, and set aside the dried cranberries.

Using an electric mixer, beat sugar and butter together in a medium mixing bowl until light and fluffy. Add eggs, one at a time, beating after each addition.

Combine flour, baking powder, baking soda and salt in a separate bowl. Add this alternately with the reserved juice drink to the butter mixture. Stir in cranberries.

Spoon into muffin cups, filling 3/4 full with batter. Bake 20 minutes or until golden brown. Makes 12 muffins.

I've been trying to bake cranberry orange muffins this Christmas, but failed several times till I found this one. I had to make high altitude adjustments(6710 ft) that were necessary. They came out perfect. I'm so happy. Very moist and they didn't flatten out. The changes I added were 2 tablespoons less sugar,2 tablespoons more of flour and half of teaspoon less of baking powder and 1 tablespoon more of juice. It's hard to find a good cranberry orange muffin recipe. Thanks oceanspray!!!

I used orange juice (because that is what I had). Loved it!!!

I have made these twice and absolutely love them! You can taste the citrius which adds a nice flavor! I will definitely make them again!
