1 loaf (16 servings)

2 cups flour

1 cup sugar

1 1/2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

3/4 cup orange juice

1 tablespoon grated orange peel

2 tablespoons shortening

1 egg, well beaten

1 1/2 cups Ocean Spray® Fresh or Frozen Cranberries, coarsely chopped

1/2 cup chopped nuts

Directions

Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan.

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan.

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf (16 slices).

Delicious, very dense

I've made this recipe several times. It's very quick to put together. It was quite heavy this time, not sure why, and it took longer to bake. I like the suggestions below to add more eggs to make it lighter.

With pumpkin seeds 5 star

I followed this recipe but made two small loaves (30 minutes ) and added pumpkin seeds instead of nuts. I used lemon peel and pithy orange juice. It was apparently, 'the best I've ever made' according to my spouse. I used to live in Massachusetts near Ocean Spray cranberry bogs. Now I live in Dublin, Ireland ...where we can also get Ocean Spray cranberries and juice

This is the ONLY cranberry bread recipe I've ever used for the past 40-plus years! It's perfect and makes the house smell like "Christmas" no matter what time of year.

Love this - but needs 1 cup OJ or it is too dry. My gramma used walnuts. I use pecans. Brings back wonderful memories and tastes great. I also used King Arthur gluten free baking mix and coconut oil Instead of flour and shortening.
