1 loaf

2 cups flour

1/2 cup sugar

2 teaspoons baking powder

1 teaspoon salt

1 egg

1/2 cup milk

1/2 cup butter, melted

2 teaspoons almond extract

1 6-ounce package Ocean Spray® Craisins® Original Dried Cranberries

1 tablespoon sugar

1/4 cup sliced almonds


Preheat oven to 375ºF. Grease an 8 1/2 x 4 1/2 x 2 inch loaf pan.

Combine flour, sugar, baking powder and salt in a medium mixing bowl. Set aside.

Combine egg, milk, butter, almond extract and dried cranberries in a medium mixing bowl. Add to dry ingredients; mixing just until the dry ingredients are moist. Spread batter in loaf pan. Sprinkle with sugar and almonds.

Bake for 1 hour or until a toothpick inserted into center of loaf comes out clean.

Makes 1 loaf.

Similiar to what I make

I was just checking your recipes and found this to be very similiar to a one I make adding additional ingredients to a popular box mix. With mine I add apple juice and chopped apple which adds more flavor. Once the bread comes out of the oven, you spoon warmed apple jelly over the almonds. Yum!

Needs more liquid!

I took note of previous reviews that stated that the product was overly dry and crumbly, so I added about 1/4 cup plain Greek yogurt and a little extra milk (sorry, didn't measure the milk) to make the batter more of a typical quick-bread consistency. With those changes the recipe is delicious; a definite keeper, and not at all dry.

This bread was so was hard as a rock. There definitely must be something missing 'cause I followed the recipe to a T.
