1 bread

2 1/4 cups flour

1/3 cup sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

6 tablespoons butter or margarine, softened

3/4 cup buttermilk

1/4 cup sour cream

1 egg

1 cup Ocean Spray® Craisins® Original Dried Cranberries

1 tablespoon caraway seeds

Directions

Grease a 9-inch round cake pan. Preheat oven to 350ºF.

Sift the dry ingredients into a medium mixing bowl. Work butter or margarine into dry ingredients until the butter is the size of small peas, using a pastry blender or fork.

Combine remaining ingredients in a separate medium mixing bowl. Add to dry ingredients, mixing just until dry ingredients are moist. Spread batter evenly in pan.

Bake for 30 minutes or until golden brown and a toothpick inserted into the center comes out clean.

Makes 1 bread.

I made this with dried cranberries and fennel seed. Fennel is both sweet and savory so it is a good blend. yumm

This recipe is a home run. It's so easy to make and it's a huge crowd pleaser. I've made it 4 or 5 times now and it never lasts long. I'm thinking maybe next time I'll add some oange zest to give it another interesting dimension.

This recipe is so easy & quick to make. I've made a lot of irish soda bread recipes, this one is the best. Everyone loves the cranberries instead of raisins.
