Ingredients

BATTER:

1/2 cup flour

2 tablespoons sugar

1/2 cup milk

1 egg

FILLING:

1 1/4 cup Ocean Spray® Fresh or Frozen Cranberries

2 apples, diced

1/2 cup chopped walnuts

1/4 cup butter or margarine

1/2 cup brown sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

Directions

Preheat oven to 400ºF. Grease a 9-inch pie plate.

Combine all batter ingredients in a medium mixing bowl. Beat using an electric mixer for one minute. Pour batter into prepared pan. Bake for 20 minutes or until golden brown.

Cook all filling ingredients in a skillet until cranberries and apples have softened.

Remove pancake from oven. If center has puffed, place a clean potholder or dishtowel on top and gently push down. Spoon filling into center of pancake. Serve immediately. Makes 4 servings.

I was searching for recipes to use the bags of cranberries I had sitting in my freezer. I made this today for brunch. It was delicious. I am keeping this recipe around to impress for my next group brunch.
