5 loaves

3 cups all-purpose flour

1 tablespoon plus 2 teaspoons pumpkin pie spice

2 teaspoons baking soda

1 1/2 teaspoons salt

3 cups granulated sugar

1 can (15 oz.) Libby's® 100% Pure Pumpkin

4 large eggs

1 cup vegetable oil

1/2 cup orange juice or water

1 cup Ocean Spray® Craisins® Original Dried Cranberries or Ocean Spray® Fresh Cranberries


Preheat oven to 350° F. Grease and flour five or six 5 x 3-inch mini-disposable or metal loaf pans.

Combine flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and orange juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries. Spoon batter into prepared loaf pans.

Bake for 50 to 55 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

Very moist and you will be asked for the recipe! Sweet enough without orange juice. I may reduce the oil next time. Made 3 - 3 x 5 loaves and 1 - 4 1/2 x 8 1/2 loaf. 45 min for mini loaves and 55 min for larger one. I love the tartness of fresh cranberry in this recipe. Large recipe but the mini loaves were fine after freezing.

Its a nice blend of pumpkin and cranberry. It easily makes six mini loaves

This recipe is outstanding. I used the Craisins and made three loaves approx size 8"x4". Baked 55 minutes in my oven.

This is some of the best bread I've ever made. I have used the recipe for 2 years in a row (using Craisins) to make mini loaves for gift-giving at Christmas, and people always ask me for the recipe. I've found that you can easily make 6 loaves -- which is a good thing since my husband has been known to steal a loaf before they cool!
