Reduced Fat Cranberry Chip Muffins


12 muffins

2 cups flour

1/2 cup sugar

2 teaspoons baking powder

1 teaspoon salt

1 egg

1 cup milk

1/4 cup applesauce

2 tablespoons oil

2 teaspoons vanilla

1 cup Ocean Spray® Craisins® Original Dried Cranberries

1/3 cup chocolate chips



Preheat oven to 375ºF. Grease a 12-cup muffin tin.

Combine dry ingredients in a medium mixing bowl. Combine egg, milk, applesauce, oil and vanilla in a separate mixing bowl. Add liquid ingredients to dry, mixing just until dry ingredients are moist. Stir in dried cranberries and chocolate chips.

Fill each muffin cup 2/3 of the way full with batter. Sprinkle sugar on top of each muffin. Bake for 25 minutes or until golden brown. Cool 5 minutes in pan; remove to a wire rack to cool completely.

Makes 12 muffins.

Very Bland

I made these according to the recipe and found that they just didn't have much flavor. The texture was odd too - they aren't moist and flaky, they're dense and hard. I also think there's too much salt in this recipe - a whole teaspoon is too much and you can taste the salt in each muffin. My kids wouldn't eat them. I won't be making these again.
