- Cranberry Simple Syrup:
- 1 cup sugar
- 1/4 cup water
- 1 clementine, peeled, sectioned and coarsely chopped
- 1 ounce Cranberry Simple Syrup (recipe above)
- 1 ounce tequila
- 1/2 ounce elderflower liqueur
- 1 teaspoon fresh lime juice
To Make Cranberry Simple Syrup:
Combine sugar and water in saucepan; bring to a boil. Stir in frozen cranberries, clementine and cinnamon stick. Reduce heat and simmer for about 5 minutes, or until cranberries pop and clementines soften, stirring occasionally. Strain through a wire mesh strainer; reserve poached cranberries to use as a garnish. Cool syrup and transfer to a container.
Combine 1 ounce Cranberry Simple Syrup, raspberry cranberry juice drink, tequila, elderflower liqueur and lime juice in cocktail shaker filled with ice. Shake; strain into martini glass. Thread 3 poached cranberries onto a toothpick and place in glass as garnish.
Makes 1 serving.
