Love this salad!

In order to accommodate the various eating issues of a large group, I leave out the bacon and cheese, add a cup of shredded carrots for color, and use vegan mayo in the dressing. Gluten free, vegan, and healthy, but most of all DELICIOUS!

Cannot get enough of this

This was a great salad that fit my diet!

Love this but for a healthier version...

I make this everytime we have a potluck at work or for holiday gatherings, although with so many people trying to eat healthier now, just pointing out that using plain yogurt instead of mayonnaise will trim off a whopping 1300 calories. If you adjust the amount of dressing down a bit a simple version of this without the bacon and cheese also tastes just fine. If I'm just making it to eat at home I usually leave those out unless it's meant to be a main course by itself.
