Red, White & Blue Farro Fruit Salad

DIRECTIONS

In a medium sauce pan, combine 3 cups of water with the farro and 1/2 teaspoon of salt. Bring to a boil and cover and reduce to simmer. Cook for 30 minutes until tender, drain any excess water. Allow to cool to room temperature.

In a medium bowl, whisk all the dressing ingredients together, add the farro and toss to coat. Fold in the rest of the ingredients and season with salt and pepper.

Makes 10 1/2 cup servings
