Ingredients
- Sugar1 cup
- Butter or margarine1/4 cup
- Egg substitute1/2 cup
- Applesauce1/4 cup
- Skim milk1/4 cup
- Flour2 cups
- Baking powder2 teaspoons
- Cinnamon1 teaspoon
- Salt1/2 teaspoon
- Peeled, chopped apples1 cup
- Craisins® Original Dried Cranberries1 cup
- Chopped walnuts1/4 cup
Steps
Preheat oven to 350ºF. Lightly spray a non-stick 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with non-stick vegetable spray. Mix sugar and butter together in a medium mixing bowl until completely blended. Add egg substitute, applesauce, and milk; mixing well. Add dry ingredients, mixing just until moist. Stir in apples, dried cranberries and nuts. Spread batter evenly in loaf pan. Bake for 55 to 60 minutes or until a toothpick inserted into the center of the bread comes out clean. Makes 1 loaf.
