Ingredients
- Chipotle Chicken Ingredients:
- Skinless boneless chicken breasts4
- Craisins® Original Dried Cranberries1 cup
- Orange juice1 cup
- Lime juice1 cup
- Chicken broth1 cup
- Cloves garlic4 diced
- Small Yellow Onions2 diced
- Chipotle peppers in adobo2 (canned), roughly cut
- Salt and pepper to taste
- Taco Ingredients:
- Small corn tortillas20-24 heated
- Queso fresco1 cup(crumbled), cojita or feta
- Shredded cabbage slaw2 cups
- Avocados2 diced
- Cilantro (optional)
- Lime wedges (optional)

Steps
Season chicken with salt and pepper and add to crockpot. Add Craisins® Dried Cranberries, orange juice, lime juice, chicken broth, garlic, onion and chipotle pepper to the crockpot. Cook on low heat for 4-5 hours or until meat shreds off easily. Using two forks, shred chicken breast and keep in sauce. Serve chicken in warmed tortillas with cheese, slaw, avocado, cilantro and lime wedges.
