Cranberry Mostarda

  • White wine1/3 cup
  • Sugar1/3 cup
  • Minced shallots1/3 cup
  • Yellow or black mustard seeds2 tablespoons
  • Fresh Cranberries1 pint
  • Mustard powder2 teaspoons
  • Salt1 pinch
  • Mustard oil1 teaspoon
  • Aleppo chili flakes1 pinch

In a heavy-bottomed sauce pan, combine the wine and sugar and simmer 3 minutes, or until the sugar is dissolved. Stir in the shallots and mustard seeds and simmer 5 minutes. Stir in 2/3 of the cranberries, along with the mustard powder, and simmer until the berries begin to pop. Remove from the heat and stir in remaining berries and mustard oil.
