  • English cucumbers2
  • Salt
  • Rice wine vinegar1/3 cup
  • Honey or pure maple syrup1/2 teaspoon
  • Toasted sesame oil2 teaspoons
  • Extra virgin olive oil2 tablespoons
  • Craisins® Original Dried Cranberries2 tablespoons
  • Blueberries2 tablespoons
  • White miso1 teaspoon
  • Freshly grated ginger1/8 teaspoon
  • Sesame seeds1 tablespoon
  • Crushed red pepper

Place the sliced cucumbers in a bowl and sprinkle with salt, to taste. Set aside. In a small bowl, whisk together the rice wine vinegar, honey or maple syrup , sesame oil, olive oil, cranberries , white miso and ginger. Drizzle the mixture over the cucumbers.
