
Fresh Cranberry-Peach Salsa

Ingredients
- Fresh Cranberries1 12 ounce
- Peach1 diced small
- Bunch scallions1 sliced thinly
- Limes2 zested and juiced
- Jalapeno peppers2 seeded and diced small
- Bunch cilantro1 chopped finely
- Olive oil1/2 cup
- Salt & pepper to taste

In the bowl of a food processor, pulse all the ingredients about 20 times (you may have to scrape down the sides) until well-combined, but not pureed. Refrigerate until ready to serve. Best served with grilled salmon, baked brie or roasted meats! Recipe by Chef Will Gilson
