Ingredients

  • Sweet italian sausage1 pound
  • Yellow onion1/2
  • Craisins® Original Dried Cranberries1 cup
  • Frozen corn1/2 cup
  • Dry orzo1 cup
  • Chicken broth3 cups
  • Chopped frozen spinach bag12 ounces
  • Pecorino romano or parmesan cheese1/4 cup
  • Black pepper1/2 teaspoon
  • Parsley2 tablespoons

Steps

In a medium pot, add the broth and allow to warm over medium heat, making sure not to boil. In a large pot, cook the ground sausage, remove casings if applicable, and break up while cooking on medium-high heat for 5-8 minutes. Add the onions, Craisins® Dried Cranberries, and corn and sauté for an additional 10 minutes. Add the orzo and heated broth. Stir to combine everything, and bring to a boil. Cover and reduce heat to a medium low and simmer for 10 minutes or until orzo is just tender. Remove from the heat and fold in the frozen spinach, grated cheese, and black pepper. Garnish with parsley and serve immediately. Chef’s Tip: You can mix up this easy one pot family dinner by subbing the Italian sausage for ground beef or poultry.
