Ingredients
- For the Salad:
- Farro1 cup
- Craisins® Original Dried Cranberries1/2 cup
- Fresh bluberries1/2 cup
- Grapes1/2 cup
- Crumbled feta cheese3/4 cup
- Pistachios1/2 cup
- Small head of radicchio1
- For the Dressing:
- Cran x Grape™1/2 cup
- Walnut or hazelnut oil3 tablespoons
- Dijon mustard1 teaspoon
- Minced shallot2 tablespoons
- Fresh thyme leaves2 teaspoons
- Pepper1/4 teaspoon
- Salt1/2 teaspoon

Steps
In a medium sauce pan, combine 3 cups of water with the farro and 1/2 teaspoon of salt. Bring to a boil and cover and reduce to simmer. Cook for 30 minutes until tender, drain any excess water. Allow to cool to room temperature. In a medium bowl, whisk all the dressing ingredients together, add the farro and toss to coat. Fold in the rest of the ingredients and season with salt and pepper. Makes 10 1/2 cup servings
