  • For the Salad:
  • Farro1 cup
  • Craisins® Original Dried Cranberries1/2 cup
  • Fresh bluberries1/2 cup
  • Grapes1/2 cup
  • Crumbled feta cheese3/4 cup
  • Pistachios1/2 cup
  • Small head of radicchio1
  • For the Dressing:
  • Cran x Grape™1/2 cup
  • Walnut or hazelnut oil3 tablespoons
  • Dijon mustard1 teaspoon
  • Minced shallot2 tablespoons
  • Fresh thyme leaves2 teaspoons
  • Pepper1/4 teaspoon
  • Salt1/2 teaspoon

In a medium sauce pan, combine 3 cups of water with the farro and 1/2 teaspoon of salt. Bring to a boil and cover and reduce to simmer. Cook for 30 minutes until tender, drain any excess water. Allow to cool to room temperature. In a medium bowl, whisk all the dressing ingredients together, add the farro and toss to coat. Fold in the rest of the ingredients and season with salt and pepper. Makes 10 1/2 cup servings
