Ingredients
- Salt1 teaspoon
- Egg1
- Milk3/4 cup
- Honey1/3 cup
- Applesauce1/4 cup
- Oil2 tablespoons
- Vanilla1 teaspoon
- Fresh Cranberries1 1/4 cups
- Flour1 1/3 cups
- Whole wheat flour2/3 cup
- Brown sugar1/4 cup
- Baking powder2 teaspoons
Steps
Preheat oven to 375ºF. Grease a 12-cup muffin tin. Combine dry ingredients in a medium mixing bowl. Combine remaining ingredients, except cranberries, in a separate bowl. Add liquid ingredients to dry, stirring just until dry ingredients are moist. Stir in cranberries. Fill muffin cups 2/3 of the way full with batter. Bake for 25 minutes or until golden brown. Cool 5 minutes in pan; remove to a wire rack to cool completely. Makes 12 muffins.
