Steps

In a 2 1/2-quart pitcher, combine cucumber, lime juice, sugar and mint leaves. Using a potato masher or large wooden spoon, crush the mixture gently to dissolve sugar and extract flavor from the cucumber and mint. Stir in remaining ingredients. Pour into ice-filled glasses; garnish with cucumber wheel and mint sprig. Non-alcoholic version: Omit vodka. Increase sparkling water to four cups. Makes about 8 servings.
