Wellfleet Oysters with Cranberry Mignonette

Ingredients
- Cava1/2 cup
- Fresh Cranberries1/2 cup
- White wine vinegar1 cup
- Sugar1 1/2 tablespoons
- Fresh ground black pepper1 teaspoon
- Kosher or sea salt1/2 teaspoon
- Finely diced shallot1 tablespoon
- Dozen shucked oysters on the half shell2
Steps
In the bowl of a food processor, combine the sparkling wine, cranberries, and vinegar and pulse until the cranberries are broken down, but still have bits of texture. Transfer to a mixing bowl and add the remaining ingredients. Adjust the seasoning to your taste. Spoon a bit of the sauce over shucked fresh oysters and enjoy!
