Winter Kale Salad with Blood Orange and Craisins® Dried Cranberries
Ingredients
For the Dressing:
Extra virgin olive oil4 tablespoons
Fresh lemon juice4 tablespoons
Dijon mustard1 tablespoon
Dill1 teaspoonchopped
Salt and pepper to taste
For the Salad:
Kale4 cupscleaned, stems removed and torn into small pieces
Broccoli1 cupcut into small pieces
Red cabbage1 cupthinly sliced
Blood oranges2 peeled and sliced
Craisins® Original Dried Cranberries1/2 cup
Goat or feta cheese1/4 cupcrumbled
Pecans1/2 cupcoarsely chopped

Steps
In a small bowl, whisk together olive oil, lemon juice, mustard, dill, salt and pepper. Toss kale with half the dressing and let it sit for 10 minutes to marinate.
Plate kale onto a salad bowl and add broccoli, red cabbage and blood orange. Add remaining salad dressing and top with Ocean Spray® Craisins® Dried Cranberries, cheese and pecans before serving.
